The real underlying factor for pressure at the nozzle is the pressure being supplied by the hose.
Hence the fire department's use of PUMPER TRUCKS to pump up the pressure.

The Plain Pipe type of nozzle is merely a tapered restriction at the end of the hose 
that maintains the pressure at the tip by restricting the flow.

The more professional type of fire fighting FOG nozzles are much more complicated 
internally. (Some are even designed to maintain a constant gallonage flow through the nozzles.)
These nozzles are designed to break the stream up in one fashion or another 
in order to create small droplets and thereby increase surface area of the water
